While technically you can use any type of rice to make paella, to achieve the authentic flavor and texture of this traditional Spanish dish, it is recommended to use short or medium-grain rice, such as bomba rice or calasparra rice. These types of rice have the ability to absorb liquid without falling apart, which is crucial for achieving a perfectly cooked paella with grains that are both loose and tender. Additionally, bomba rice and calasparra rice have a greater capacity to absorb the flavors of the broth and ingredients in the paella, which significantly contributes to the final result of the dish. Therefore, while not strictly necessary, using the right type of rice can make a difference in the quality and authenticity of your paella.

Fideuà is a traditional Spanish dish, originating from the Valencian Community, that resembles paella but instead of rice, it is made with thin noodles.
