In 1986, Francisco Riberas, by then one of Spain's most prominent entrepreneurs, acquired the La Ventilla estate in El Carpio de Tajo (Toledo) to begin his journey in agriculture. He soon infused his distinctive character into this new venture, gradually expanding the boundaries of the original small farm into a vast mosaic of crops and resources. At Casas de Hualdo, there is only one guiding principle: the pursuit of excellence. From the fields to the mill, the team dedicates itself to caring for the olive trees so that their fruit is transformed into elegant oils that capture all the aromas and flavors of each olive. Unique oils, excellent oils, unrepeatable oils. At Casas de Hualdo, we carry out meticulous monitoring of the cultivation throughout the year: nurturing its growth, ensuring its health, managing the soil, and overseeing all stages of fruit development. We use the most modern cultivation techniques, such as monitored drip irrigation and fertigation. Despite the extensive olive grove, we make sure to understand the condition of each plot to achieve the best results from our olives. Through ripeness monitoring and thanks to constant observation and acquired experience, we determine the optimal moment for harvesting the different varieties and groves. This occurs between October and November. Early harvesting results in a significant reduction in production, but it allows us to obtain much more aromatic and expressive oils that showcase the potential of our land.

All processes, from reception to bottling, are equipped with the latest technology and are carefully designed to extract the best from the fruit. The location of the mill, at the foot of the field, ensures that the olives arrive fresh at the milling area. To prevent deterioration, the olives are processed within six hours of harvesting. During extraction, the temperature is kept below 25°C to prevent the loss of the most volatile components and aromas. At Casas de Hualdo, we bottle practically on demand, which allows us to maintain the oil in optimal preservation conditions. The oil is stored in inertized stainless steel tanks at a temperature between 18 and 22°C throughout the year, preserving its properties to the fullest. Each harvest produces 700,000 liters of premium oil exclusively from our own olive groves, ensuring the quality and traceability of our extra virgin olive oil.

I had never seen Manzanilla olive oil before, so I decided to try it. Very delicious and with a very smooth flavor, ideal for toast.
