DESCRIPTION

The Unfiltered Extra Virgin Olive Oil Sikitita is a gourmet olive oil produced preserving all its purity and flavor, since is an unfiltered olive oil. If you haven't tried unfiltered olive oil yet, we highly recommend the experience! It’s the most authentic taste of pure olive oil you'll ever have, with an amazing green color and gripping the throat and providing a unique experience. You can even see small particles from the oil's impurities through the bottle.

Honestly, it's one of the best (if not the best) oils we've ever had. I know we said the same about our other oil from Isbilya, the Koroneiki variety, but this brand has us completely in love!

Production

This gourmet olive oil is early harvest and cold extracted. Furthermore, it has been bottled in premium glass under an inert atmosphere.

Sourced from select olives in Sevilla and processed using traditional methods, it embodies the essence of Andalusian culinary heritage. Ideal for enhancing a wide range of dishes, from salads to grilled meats, this unfiltered olive oil adds depth and complexity to any recipe.

How to use this olive oil?

It is recommended for more delicate palates looking for more sophisticated flavors, with a touch of spice. Perfect to be used uncooked, both on its own and with a great variety of foods to improve flavor and texture.

Variety

Monovarietal Sikitita

What is Sikitita olives?

Sikitita olives is a new variety obtained from the crossbreeding of two olive varieties: Picual and Arbequina. With their small size and high oil content, they are ideal for the extraction of extra virgin olive oil, which can be used in a variety of dishes to enhance their flavor without overpowering them.

The Sikitita variety is prized for producing olive oil with a smooth and fruity flavor, along with a delicate aromatic profile. Additionally, it is known for its low levels of bitterness, making it particularly appealing to those who prefer a milder taste in their olive oil.

Tasting notes

On the nose, it presents a high intensity of fruity aromas with notes of fresh leaves and grass, as well as hints of tomato and a curious combination of aromatic herbs.

On the palate, it is moderately bitter and spicy, with certain nuances reminiscent of almonds and even banana.

ABOUT ISBILYA

They don't view the field as a traditional sector, nor do they carry out the elaboration processes in the conventional manner. An important factor is their commitment to promoting year-round employment rather than seasonal work, and they prioritize transparency by openly sharing information with those who trust them.

Isbilya prioritizes selling quality, or rather, very high quality products, because they are honest about their practices and beliefs. Established in 2012, they have continuously pushed forward, with their sights set on global reach.

With over 40 hectares planted in the heart of Aljarafe (Seville), Isbilya benefits from an exceptional environment where they cultivate four olive varieties: Arbequina, Arbosana, Koroneiki, and Sikitita. They dedicate considerable resources to caring for their olive trees while preserving the native fauna and flora.

Teresa and Ángel Martínez, the founders of Isbilya, reflect on the time and effort invested in their venture. As a biologist and chemist, respectively, they have poured countless sleepless nights into creating products that excite people and rejuvenating the extra virgin olive oil sector. Despite the challenges, they believe every effort has been worthwhile.

Expensive, but definitely worth it

I had never tried unfiltered olive oil before, and after tasting it, I don't think I'll ever buy any other kind again... It leaves an indescribable sting in the throat, and the flavor is pure olive oil. A bit pricey, but worth every penny!
