What are Sikitita Olives?

The Sikitita olive is a new variety resulting from the crossbreeding of the Picual and Arbequina olive varieties. Known for its small size and high oil content, the Sikitita olive is perfect for producing extra virgin olive oil with a fruity and smooth flavor. This variety is valued for its low bitterness, making it an ideal choice for those who prefer a milder olive oil that doesn’t overpower the dishes it enhances.

Production – A Blend of Tradition and Innovation

This gourmet olive oil is carefully crafted using a combination of traditional methods and modern technology. The Sikitita olives are harvested at the optimal time to ensure their flavor profile remains intact. This cold-extracted oil is then bottled in a controlled environment to preserve its natural aromas and nutrients, delivering a product of exceptional quality.

How to Use Sikitita Olive Oil in Your Cooking

The Unfiltered Extra Virgin Olive Oil Sikitita is recommended for delicate palates looking for more sophisticated flavors, with a touch of spice. It’s best enjoyed uncooked, but its versatility makes it a great complement to a variety of dishes:

  • Grilled Meats and Seafood: Its mild, fruity flavor enhances the natural taste of grilled dishes without overpowering them.
  • Raw Enjoyment: For true olive oil lovers, savor it on its own with crusty bread to fully appreciate its depth of flavor.

Tasting Notes – A Complex and Balanced Olive Oil

They don't view the field as a traditional sector, nor do they carry out the elaboration processes in the conventional manner. An important factor is their commitment to promoting year-round employment rather than seasonal work, and they prioritize transparency by openly sharing information with those who trust them.

Isbilya prioritizes selling quality, or rather, very high quality products, because they are honest about their practices and beliefs. Established in 2012, they have continuously pushed forward, with their sights set on global reach.

With over 40 hectares planted in the heart of Aljarafe (Seville), Isbilya benefits from an exceptional environment where they cultivate four olive varieties: Arbequina, Arbosana, Koroneiki, and Sikitita. They dedicate considerable resources to caring for their olive trees while preserving the native fauna and flora.

Teresa and Ángel Martínez, the founders of Isbilya, reflect on the time and effort invested in their venture. As a biologist and chemist, respectively, they have poured countless sleepless nights into creating products that excite people and rejuvenating the extra virgin olive oil sector. Despite the challenges, they believe every effort has been worthwhile.

Expensive, but definitely worth it

I had never tried unfiltered olive oil before, and after tasting it, I don't think I'll ever buy any other kind again... It leaves an indescribable sting in the throat, and the flavor is pure olive oil. A bit pricey, but worth every penny!
