Production Process – A Rare Olive Oil from the First Harvest

On a few specific days in October, during the early harvest season, the Manzanilla Cacereña green olives are harvested to produce this premium olive oil. It takes at least 20 kg of olives to obtain just 1 liter of oil, as the green olives have not yet formed their full oil content. This careful, labor-intensive process results in an oil that is both highly exclusive and incredibly flavorful.

In its continuous commitment to environmental care, in September 2007, Jacoliva inaugurated an innovative water treatment plant for the water used in cleaning olives and the alpechín from the mill.
