How to eat Salchichon Ibérico de Bellota?

For us, it's a staple when we prepare a Spanish charcuterie board. We also love it for breakfast or as an appetizer, placing thin slices on good toasted bread with a drizzle of Spanish extra virgin olive oil.

COVAP is the largest farmers cooperative in Spain. Since 1959, for over four generations, our farmers have been dedicating their lives to raise the one and only purebred Ibérico pig. Our free-range 100% Ibérico pigs enjoy roaming on very special acorns in one of the largest holm oak forests in the world. They eat up to 20lb of acorns a day! The fallen acorns from these ancient oak trees are sweeter than in other areas in Spain, and as a result, our salt-cured hams are very balanced instead of salty.

The Valle de los Pedroches has the largest expanse of centuries-old holm oaks in the world: over 300,000 hectares of continuous Dehesa, providing acorns to our Ibérico pigs and a natural habitat for them to live freely.

A one-of-a-kind place in the world, with a privileged microclimate for curing that imparts the unmistakable personality to our Ibérico products.

Because we are a cooperative of livestock farmers who, generation after generation, have upheld a commitment to authenticity.

Better than Italian Salami

I bought it thinking it was similar to Italian sorpressata or salami, but it's much tastier. I suppose it's because it's made from Iberian pigs, but it's spectacular. I'll buy it again.
