The origin of Sherry Vinegars dates back almost three thousand years, tracing back to the 7th century BC. 

Jerez Vinegar PDO

Jerez Sherry Vinegar can only be made from wines covered by the Denominations of Origin Jerez and Manzanilla Sanlúcar de Barrameda, a condition that means our vinegars can only come from three grape varieties, which coincide with those allowed by these denominations to produce their wines.

These three varieties are Palomino, Pedro Ximénez, and Moscatel. The first is more neutral, the second reminiscent of dried fruit, and the third more floral, qualities that are transferred to the vinegars and, together with the duration of their aging and the amount of residual sugar in the vinegar, create an endless palette of aromas and flavors.

Types of Jerez Vinegar

There are different types of Sherry Vinegars. This variety is due to the different aging times, the different grapes used to make the base wine, and the existence of semi-sweet Sherry Vinegars. Each Sherry Vinegar is unique and has recommended uses, although obviously, everyone can use them as they wish.
