The "Sardina pilchardus" is a gregarious species, undertaking significant migrations during its life.
This blue fish is a marvel of the sea, packed with nutrients despite its size. Captured between the months of August and November, using purse seine fishing, preferably at dawn, to ensure the best flavor.
