The origin of Sherry Vinegars dates back almost three thousand years, tracing back to the 7th century BC. 

Jerez Vinegar PDO

Jerez Sherry Vinegar can only be made from wines covered by the Denominations of Origin Jerez and Manzanilla Sanlúcar de Barrameda, a condition that means our vinegars can only come from three grape varieties, which coincide with those allowed by these denominations to produce their wines.

These three varieties are Palomino, Pedro Ximénez, and Moscatel. The first is more neutral, the second reminiscent of dried fruit, and the third more floral, qualities that are transferred to the vinegars and, together with the duration of their aging and the amount of residual sugar in the vinegar, create an endless palette of aromas and flavors.

Types of Jerez Vinegar

There are different types of Sherry Vinegars. This variety is due to the different aging times, the different grapes used to make the base wine, and the existence of semi-sweet Sherry Vinegars. Each Sherry Vinegar is unique and has recommended uses, although obviously, everyone can use them as they wish.

  • - Sherry Vinegar: ages between six and two years in wood. It has an intense amber color with mahogany reflections. Its aroma may remind you of nuts and it's a perfect dressing for reductions, sauces, and pickles.
  • - Sherry Vinegar Reserva: ages between two and ten years. It has an intense mahogany color. Its aroma recalls vanilla, nuts, and the passage through wood. It is ideal in cold soups such as gazpacho or vichyssoise.
  • - Sherry Vinegar Gran Reserva: must exceed ten years of aging. It has a mahogany color and a silky texture. Its acidity and aromas are more concentrated and it works wonderfully with salmorejo, roasted vegetables, or salads.
  • - Sherry Vinegar Pedro Ximénez: ages for a minimum of six months and takes its name and organoleptic characteristics from the wines made with this grape. It is dark and dense in color. It is a semi-sweet vinegar and its aroma recalls dried fruits, licorice, and toasted notes. It is a perfect condiment for meats and a great ally for desserts and cheeses.
  • - Sherry Vinegar Moscatel: ages for a minimum of six months and acquires the floral and lively qualities of Moscatel wines. It is ideal with salads and dressings containing fruits and citrus.
