The Cantabrian Sea (Bay of Biscay, FAO 27 and FAO 37) serves as the main source and inspiration for delivering the freshest fish to consumers. Conservas El Capricho sources anchovies during the spring fishing season from small Spanish boats using traditional purse seine methods. Bonito is line-caught during the summer season, emphasizing their commitment to sustainable fishing practices.

Once caught, the fish is transported to the Santoña facility, where it is meticulously processed and handled with care. Skilled artisans then hand-pack the fish using a unique and rigorous method, transforming it into a true delicacy.
