Specifically, it is found at the end of the trunk. It comes from the muscular mass of this fish, being a lean meat. We could say it is the white loin of the tuna. It has a triangular shape, a reddish color, and less fat than the belly (semi-fatty).

Known in Spain as "Atún Rojo" due to its characteristic color, it is considered the highest quality tuna. It is found in few areas of the Atlantic, but mainly concentrated in the Strait of Gibraltar area, in the Cadiz region, southern Spain.
